White Bean Soup with Kale

Serves 3  

1/3 cup water
4 cloves of garlic, thinly sliced
1 small yellow onion, chopped
2 plum tomatoes, chopped
2 teaspoons oregano
1 can (15 oz) Cannellini or Northern beans
1 quart low sodium vegetable broth
Black pepper
2 cups kale, ribs removed, chopped


Bring water to boil in a soup pot, add garlic, onion, tomatoes, and oregano, and cook until tender. Add beans and vegetable broth, bring to a boil, and season with black pepper. Add kale into the pot to steam for a few minutes right before serving. Serve with whole wheat bread or cooked quinoa.
