Serves 2
1 cup shredded purple cabbage
1 cup shredded green cabbage
1 tomato, chopped
½ avocado, chopped
½ cup chopped cilantro
1/3 cup chopped scallion
1/3 cup grated carrot
2 tablespoons sunflower seeds
Combine all the vegetables in a bowl, add the dressing, and toss them. Sprinkle sunflower seeds on top before serving.

1/3 cup balsamic vinegar
2 tablespoon lemon juice
1 tablespoon almond butter
(Optional) Oregano, marjorie and parsley add a nice Italian flavor.
Mix all the ingredients until smooth.
