Walmut and Mushroom Burgers

Serves 6

1 ½ cup old-fashioned rolled oats
1 cup ground walnuts
1 cup water
¼ cup tomato paste
1 cup finely chopped onion
3 cloves of garlic, pressed
6 cups finely minced mushrooms
2 teaspoons dried basil
½ teaspoon dried oregano
Black pepper to taste

Preheat the oven to 350F. Combine rolled oats and ground walnuts in a bowl and set aside.
Combine water, tomato paste, onion and garlic in a saucepan, and cook until tender. Add mushrooms and cook for 5 minutes. Divide the mixture in two equal parts, put one half in a food processor or a blender, process until mushy. Put the mushy mixture into the rolled oats and walnuts, add the remaining cooked onion and mushrooms, dash of black pepper to taste, and kneed the mix with wet hands.
After mixing well divide it into 6 balls and then make 6 patties.
Place them on a lightly oiled baking sheet. Bake them for 20 minutes one side, turn, and bake the other side for 15 minutes or until lightly browned. Remove from the sheet and cool. Serve over salad or on a whole wheat bun with red onion, lettuce, tomato and low salt ketchup.
