¼ cup rolled oats
2 tablespoon coconut flakes
1 tablespoon almond butter
1 avocado, peeled and cut into quarters
¼ cup fresh lime juice (about 2 limes)
2 tablespoon erythritol*
1 tablespoon coconut butter
1 tablespoon coconut flakes (optional)
Mix the crust ingredients in a bowl until sticky and divide it equally in half. Put ½ of the crust mixture in each glass dessert dish and press lightly.
Combine the filling ingredients in the blender or a food processor, blend until creamy, and spoon it over the crust. Sprinkle some coconut flakes on top (opt). Serve right away or refrigerate 10 minutes before serving.
Erythritol is a sugar alcohol and has zero calories. It occurs naturally in some fruit and fermented foods, and it can be produced by glucose fermentation industrially.
